- Feeding the animals only natural foods
- Individual traceability of each animal
Respect of Time - 4 month rest period of each enclosure between groups of livestock, to ensure vegetation renewal
- Slaughter of the animals at 180kg, creating succulent and tender meat
- Curing of the hams, using only the natural humidity and the southerly winds of the valley
Respect of Local Products - With Euskal Xerria to maintain and increase the quality of local products.
- We use and sell local products such as Piment d’Espelette AOC, Irouleguy wine, home made farm cheeses and fruit juices from les Aldudes�
Respect of Tradition - We cook traditional Basque recipes such as piperade, pâtés, hams, and cured meats.

It counts many diverse roles, including : Safeguarding of the Basque Pig as a pure-breed Avoiding potential breeding problems such as consanguinity Promotion of local products Ensuring a continued local environmental balance
In 2001, the partners applied to be recognised as an AOC (Appellation d’origine Contrôlée) for Basque Pork.
